Prick green walnuts all over with a wooden hairpin, soak them in soft water for 9 days, and then set them in the same soft water on top of the stove. Let them boil until they are tender enough to be pierced easily by a wooden hairpin. Drain the nuts in a fine sieve. For 1 lb nuts, weigh out 2 lbs sugar. Use half the sugar to prepare a syrup that is not very thick. Add a piece of cinnamon and several cloves. Cool the syrup before pouring it over the nuts, let them stand in the syrup for 3 days, and then drain the nuts in a fine sieve. Add the remaining sugar to the syrup, bring once to a boil, cool, pour over the nuts, and let stand for another 3 days. Then again turn the nuts into a sieve, reduce the syrup to the necessary thickness, pour it over the nuts while still hot, and let stand for 9 days. Transfer to a jar and tie with a bladder.
