For 1 bottle vinegar, add 2 level spoons salt, finely shredded celery root, parsley root, carrots, onions, a handful each of allspice and bay leaves, a little mace, and cloves. (Cinnamon, cardamom, and garlic may also be added, if desired.) Bring to a boil and cool.
