Peel 20 apples and cut each into several pieces. Bring water to a boil with sugar or honey, drop in the apples, bring to a boil twice, and turn into a sieve. When they have dried, pack into a jar. Bring 4½ glasses vinegar to a boil with 1½ lbs sugar or honey, and add cloves, cinnamon, allspice, and salt. Cool, pour over the apples, tie up, and store in a cold place. Serve with meats.
