Method

Gather very ripe gooseberries and dry them out in a very low oven. Such gooseberries are very tasty when added to a sour-sweet brown sauce to be served with beef and calf’s feet or head. They replace raisins to some extent. Before using, they must be scalded with boiling water and left to soak.
