2577 Milk-agaric mushrooms



Select small milk-agaric mushrooms. Wash, but do not soak them, and let them dry off in coarse sieves. Pack them in large jars, interspersing them with dill. Dust each layer lightly with salt. Do not weight the mushrooms, but sprinkle a fair amount of salt on top and cover with a cabbage leaf. Soak before using.
