Method

Boil yellow or red carrots in water until they soften slightly. Remove from the water, cut up attractively into little stars, leaves, etc., drop into a thick syrup, and cook until they become translucent. Since carrots are available all year, there is no need to store up supplies of this jam, thereby wasting sugar unnecessarily. For a quick preparation, ½ lb sugar and 1 glass water will be sufficient for 1 lb carrots.
