Set aside a fine, whole head with attractive ears for Easter. Salt and smoke the head; halve less attractive ones. Salt and smoke the lower jaws which are extraordinarily tasty for garnishing sauces. Or, use them to prepare Jowls. Remove the brains from the upper part of the head and use them while they are still fresh. Use the head itself for jellied meat (studen’).
