Method

Remove the organs. The lungs, heart, spleen, and liver are used fresh and in sausages. Place the intestines immediately in a washtub with snow and cover them with more snow. Clean them out and wash as well as possible. Carefully cut off the fat which adheres without making any holes in the intestines, which are used for frankfurters and sausages.
