Pour 2 glasses white haricot beans or broad beans [Vicia faba] into boiling water, bring to a boil, and pour off the water. Cover with a little hot water, add salt and about 2 spoons oil, and stew, covered, over a low fire. When the beans are almost cooked, add 2 seeded lemon slices or a little vinegar and 1–2 pieces sugar and cook until done. Sprinkle with greens and serve with fish patties or simply for breakfast.
