Method

Boil a zander or trout, cool, and place on a platter with the backbone uppermost. Flatten the fish and cover with clear aspic. Cut up baked beets, red carrots, potatoes, and beans into very fine even pieces to make them extremely attractive. Mix the vegetables together and strew them over the platter of fish. Serve mustard sauce separately. Fish prepared in this manner is mostly served for breakfast.
