Method

Cut the salmon into pieces, dip in olive oil and fast day crumbs, and fry on a gridiron. Prepare a green sauce from olive oil, mustard, vinegar, salt, pepper, nutmeg, lemon zest, mashed and finely chopped green parsley, and mashed anchovies. Pour this sauce over the fish and decorate with marinated plums.
