Prepare Dough #3074. Scald 1½ lbs ripe plums with boiling water, halve each plum, remove the pits, and place the fruit in a saucepan. Add ¼–½ glass fine sugar and stew over the fire, constantly shaking the saucepan to prevent the plums from burning. Cool, drain the plums well, reserving the syrup, and stuff the vareniki. To serve, boil the vareniki and pour on the reserved syrup boiled with 1 glass water, ¼ glass sugar, and a piece of vanilla bean.
