Our grandchildren love this French toast, and it’s always very popular when it’s on the brunch menu in the café. We like to give it the doughnut treatment and dust it with cinnamon and sugar as soon as it’s out of the pan.

Ingredients

4 medium eggs
200 ml milk
2 tsp vanilla extract

Method

Crack the eggs into a bowl with the milk and vanilla extract and whisk until well combined. Pour into a wide dish or tray.
Cut the brioche slices in half diagonally, then, working in batches, put them into the eggy mix and turn so both sides are coated. Leave them to soak for a minute (no longer or they will get too soft).
Melt a knob of butter in a f
