If you want to make your own hollandaise sauce, go ahead, but to be honest we always use the Atkins & Potts brand, which is delicious and makes this a very easy breakfast to put together.
Butter the toast and spread each piece with a heaped tablespoon of tomato salsa. Fan some avocado slices over the salsa, then top with a poached egg and a spoonful of hollandaise sauce.
Crumble over a little feta and then sprinkle with chopped parsley and red chilli.
