Scottish asparagus is excellent, grown in Perthshire and along the coast in Angus, so for its brief season we eat as much of it as possible. This recipe is an old favourite, and one that I’m inclined to make when there is asparagus in abundance.

Ingredients

  • 25 g butter
  • 1 small leek, chopped
  • 200 g smoked baco

Method

  1. Preheat the oven to 150°C/130°C fan/gas mark 2.
