A comforting winter warmer, pea and ham soup is a classic for a reason. This version uses petit pois which really lighten the flavour.

Ingredients

  • 1 small ham shank
  • 1 tbsp olive oil
  • 1 onion, chopped

Method

  1. Put the ham shank in a pot and cover with 2 litres of cold water. Bring to the boil, then simmer gently over a medium-low heat for 1 hour 30 minutes, until the ham is cooked.
  2. Remove the shank and set aside until it is cool enough to handle, reserving the cooking liquid as this will be the stock for the soup. Take the ham off the bone and shred into small pieces
