A hearty main course salad, this looks quite dramatic and unusual. It’s also delicious with a bit of feta crumbled on the top. You can get black rice in health food shops, larger supermarkets or online, and it’s worth searching out as it’s very tasty and has a great texture when cooked.

Ingredients

  • 125 g black rice
  • ½ butternut squash, peeled, deseeded and diced
  • olive oil

Method

  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. Cook the rice in plenty of salted boiling water for 30 to 35 minutes, until al dente.
