This is so tasty on its own but particularly good with some hot smoked salmon or in tacos. You can make the base in advance, then all you need to do is add the avocado just before you want to eat.

Ingredients

  • 1 red onion, finely diced
  • 2 ripe mangos, peeled and flesh cut into 2cm dice
  • 2 chillies, finely chopped

Method

  1. In a bowl, toss together the red onion, mango, chillies, coriander, fish sauce and lime zest and juice.
  2. Just before serving, peel the avocados and cut into small dice, then stir them through the salad.
