We have served this salad for many years, both at home and in the café, sometimes without the bacon as it makes it more flexible for customers. It is a meal in itself, served with crusty bread and some hard-boiled eggs on the side. It’s also a good dish for a party or barbecue as it’s so easy to scale up.
If you don’t have any honeygar, use 2 tablespoons of cider vinegar and ½ a teaspoon of honey, then taste and adjust the sweetness according to how you like it.
