Tangy and versatile, this goes alongside a whole host of dishes at our café and we also sell it at our deli counter. It’s a great salad to make for a barbecue too. If you don’t have any honeygar, just use the same quantity of cider vinegar and a teaspoon of honey (plus more to taste).

Ingredients

  • 100 g kale, shredded
  • 3 carrots, peeled and grated
  • 1 red onion, thinly sliced

Method

  1. Put the shredded kale in a salad bowl with the carrot and red onion.
  2. In a small bowl, whisk together the mayonnaise, honeygar, olive oil and mustard and season to taste with salt and freshly ground black pepper.
  3. Pour the dressing over the salad and mix well so everything is well covered.
