Everyone has their way of roasting beef, and this is mine. We’re very proud of the beef that we produce on the farm, and there’s no better way to showcase it than in a simple roast. I always use sirloin and roast it on a bed of veg, then make a very simple farmhouse gravy out of the juices.

Ingredients

  • 1.5 kg sirloin
  • 1 tsp salt
  • 2 tsp

Method

  1. Preheat the oven to 220°C/200°C fan/gas mark 7. Get the beef out of the fridge at least 30 minutes before you plan to cook it to let it come to room temperature.
  2. Rub the beef all over with the salt and plenty of freshly ground black pepper, then rub in
