Who doesn’t love a steak sandwich, especially when it’s slathered with a zesty, herby sauce? Popular in our house when everyone’s watching the rugby.

Ingredients

  • 2 red peppers, cut into long strips 1cm thick
  • 1 onion, cut into 5mm rings
  • 1 aubergine, cut into 5mm slices

Method

  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
