This is a version of a great Claire Macdonald recipe that I’ve made for years – I started making it at home and now it’s always on the menu at the café. It’s delicious and is even better the next day, so if you have time, leave it to go completely cold and put it in the fridge overnight to reheat the next day. It also freezes really well.
