I often serve this at family get-togethers. It’s fresh, light and delicious and it’s super easy to make, and everyone from my youngest grandchild to my husband Ian loves it.
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking tray with greaseproof paper.
In a bowl, combine the cumin, cayenne pepper, salt, pepper and oil. Add the fish and toss so it’s fully coated, then tip it onto the lined baking tray.
