This is a super easy and delicious one-roasting-tin, blitz-and-bake recipe. It’s even tastier the next day. If you want to bulk it out a bit, add some diced chicken breast to the roasting dish with the veg.

Ingredients

  • 1 large cauliflower, cut into florets
  • 1 butternut squash, cut into 2–3cm dice
  • 1 brown onion, choppe

Method

  1. Preheat the oven to 220°C/200°C fan/gas mark 7.
