A lovely vegetarian dish that you can make with whatever mushrooms you like – it’s delicious made with the cultivated varieties you find in the supermarket, and even better with wild mushrooms like chanterelles or boletus.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed

Method

  1. Heat a large saucepan over a medium heat. Add the oil and the onion along with a good pinch of salt and sauté for 5 to 7 minutes or until soft.
  2. Add the garlic to the pan and continue to cook for 2 minutes, then add the mushrooms. Continue to cook for 5 to 6 minutes, or until the mushrooms are tender and golden brown.
