We make these a lot in the café, as you can part bake them and then put them back in the oven to finish them off when an order comes in – a great trick to get ahead for a party at home too. We fill them with all sorts of things, but this is our most popular version. You can use any vegetables you like, to a total weight of about 500g. Just chop them into 1cm pieces before you roast them.
