This recipe came from a wonderful baker called Mairi. She worked with us for the first 12 years of the café, and she really set the standard for the baking. She was incredible – one of the hardest working people I’ve known, and with the lightest touch when it came to baking. You’ll not find a better shortbread recipe!

  • 125 g caster sugar

Method

  1. Put the butter, caster sugar, flour and cornflour in a food processor and blitz until you have a dough. (You can also do this by hand in a bowl, but a food processor makes light work of it.)
  2. Put the dough on a lightly floured worktop and split it into two equal pieces. With your hands, roll each piece into a log about 20cm long and 6cm in diameter.
