My mum must have made hundreds of these pancakes over the years. This is her recipe and it’s very handy: the pancakes freeze really well so you can always defrost some quickly for surprise guests. Make them on an old-fashioned girdle, or in a frying pan.

Ingredients

  • 120 g plain flour
  • 65 g sugar
  • ½ tsp

Method

  1. Sift the flour into a bowl and mix with the sugar, cream of tartar and bicarb.
  2. Pour the milk into a jug and beat in the egg and syrup. Pour this onto the flour mixture and mix until it’s just combined – it doesn’t matter if it’s a bit lumpy.
  3. Lightly grease the girdle or frying pan with a bit of kitchen roll with butter on it, then put it on a medium h
