I love these – they are rather old-fashioned but incredibly tasty and quick to make, and they keep for ages in the fridge.

Ingredients

  • 140 g rich tea biscuits
  • 115 g butter
  • 85 g

Method

  1. Put the rich tea biscuits in a food processor and blitz until you have coarse crumbs.
  2. Put the butter, sugar and vanilla in a heavy-bottomed pot and slowly melt over a low heat. Add the dates, turn the heat up and bring to the boil, stirring so nothing catches, then take the pan off the heat and mix in the beaten egg.
