Kirsty is my daughter-in-law’s mother, and she gives these truffles to us for Christmas every year. I absolutely love them, so she kindly gave me the recipe to include here.

Ingredients

  • 100 g butter
  • 100 g condensed milk
  • 50 g

Method

  1. Put the butter in a pot with the condensed milk and sugar and put it over a medium heat, stirring as the butter melts.
  2. In a food processor, crush the biscuits to fine crumbs.
  3. Once the butter mixture comes to the boil, take it off the heat and add the crushed biscuits, apricots, lemon zest, almonds and almond essence.
