This is a favourite for family birthdays, with whipped cream in the middle and pink icing flavoured with a hint of rose water on top. It’s very simple, light and fluffy, but as it doesn’t contain any fat you do need a light hand to make it, folding in the flour just enough to incorporate it and no more. It’s best eaten the day you make it or the day after.
