This started life as a damp and fruity apple and almond cake, which we had on the menu very early on. Then we came up with this variation, which is really quite special. It looks very impressive, and the crunch of the amaretti biscuits is lovely against the moist cake. We always use dry amaretti biscuits, but if you can only find the soft ones it will still work fine. Sometimes the cake sinks a bit in the middle, but I wouldn’t worry about it too much.
