A Scottish classic, strawberry tarts are on the Gloagburn menu as soon as the local berries are in season. They’re incredibly popular and really not hard to make. The pastry cream can be made in advance and kept in the fridge for 2 weeks.

Ingredients

For the Pastry Cream

  • 35 g plain flour, sifted
  • 2 medium eggs
  • 85 g

Method
