Perthshire has been famous for its soft fruit farms for as long as the Nivens have farmed at Gloagburn, and it’s always a treat to see the first berries come into the shops. Summer Pudding is what I make when the season is at its height; sweet and tart in flavour, it looks beautiful and is deceptively straightforward to make.

Ingredients

  • 200 g strawberries
  • 200 g raspberries

Method

  1. Put the fruit in a saucepan with the sugar and 4 tablespoons of water. Cook over a medium heat for about 5 minutes, until the fruit is soft but before it collapses into a pulp. Strain through a sieve set over a bowl to catch the fruit juices.
