Customers are always very surprised when they find out what this chutney’s made of: it’s very fruity and well flavoured, but it doesn’t taste particularly of banana. It’s a wonderful recipe though and seems to keep forever. You can use any old bananas: very green ones or really overripe ones – it doesn’t matter.

Ingredients

  • 1 kg bananas, chopped
  • 2 onions, chopped
  • 500 ml malt

Method

  1. Put the bananas, onions, vinegar, curry powder, turmeric, red peppers, raisins and garlic in a large heavy-based pot and bring to the boil over a medium-high heat.
  2. Turn down to medium-low and simmer for 1 hour, until all the vegetables are very soft.
  3. Add the sugar and cook until your wooden spoon leaves a trace in the chutney, about another 30 minutes
