You can’t beat freshly made raspberry jam – it’s our best-selling jam and it’s very easy to make. The smell around the kitchen when you’re making it is very lovely. The secret is not to over-boil the jam so that it keeps its beautiful colour.

Ingredients

  • 1 kg raspberries (fresh or frozen)
  • 1 kg granulated sugar

Method

  1. Put a small plate in the freezer.
  2. Put the raspberries in a jam pan or large pot over a medium heat. Simmer for about 20 minutes, until the fruit has broken down completely.
  3. Add the sugar to the hot fruit, stirring until it has dissolved, then turn the heat up and bring to a rapid boil. Boil for about 10 minutes.
