Plums are particularly good for making jam as they naturally contain a good level of pectin (which helps the jam set). So if you’ve never done any preserving before, this is a great place to start.

Ingredients

  • 1 kg Victoria plums, halved and stoned
  • 1 kg granulated sugar

Method

  1. Put a small plate or saucer into the freezer.
  2. Put the plums into a jam pan or large pot on a medium heat, then add 500ml water and bring to the boil. Turn down the heat and simmer for around 30 minutes, until all the fruit has broken down and looks pulpy and well cooked.
  3. Add the granulated sugar and stir until it has dissolved, then turn up the heat a
