Ian’s mum, Rita, makes the best lemon curd I’ve ever had. Eat it on toast, or better still use it to top the Limoncello Pavlova.

Ingredients

  • 4 eggs
  • 2 egg yolks
  • 115 g unsalted butter

Method

  1. Beat the eggs and egg yolks together in a bowl.
  2. Melt the butter in a saucepan over a low heat, then stir in the lemon juice and zest, then the sugar and beaten eggs.
  3. Cook, still on a low heat, and stir until the curd has thickened to the consistency of custard. Don’t rush it as you don’t want the curd to boil and scramble.
