Whether you agree or not, a criticism of regular pancakes is that they’re relatively empty nutritionally (notwithstanding that you can top them with all sorts of fresh fruit and other options). By adding sweet potato puree to pancake batter, you’ll boost the pancakes’ dietary fiber, potassium, and vitamin A, among other benefits. If making your own sweet potato puree, plan ahead and follow the roasting and pureeing directions below; otherwise, feel free to substitute store-bought puree.
