Bite-size Tater Tots, that classic from Ore-Ida, are a favorite of kids everywhere, and a school lunch-room staple. These sweet potater tots (we’re suckers for a good play on words) swap in more-nutritious sweet potatoes for the traditional white potatoes.

  1. Bring a large pot of water to a boil. Place the whole sweet potatoes into the pot and boil for 15 minutes, until they are fork-tender but not soft. When cool enough to handle, peel the skin off and shred the potatoes using a large-holed grater.
