This new twist on an old favorite turns cornbread into a more versatile meal. You can make them ahead of time, freeze, and reheat as needed. They also travel well as a portable lunch or dinner.

Ingredients

Filling

  • 1 tablespoon olive oil
  • ½ red bell pepper, diced
  • ½ medium yellow onion

Method

  1. To make the filling, heat the olive oil in a large sauté pan over medium-high heat. Add the red pepper and onion and sauté until softened, 3 to 4 minutes. Add the ground turkey and sauté until brown and cooked through. Add the cumin, chili powder, oregano, and garlic powder and stir to combine. Stir in the corn and tomatoes and sauté for about 1 minute. Season with salt
