Cumberland sauce is great tipped over large, succulent slices of hot ham and, confused together with the gravy on your plate, is also good with goose or turkey. Christmas just isn’t Christmas without it, enough so that I once took ajar to India with me as a reminder of home for the festive day. Sadly, I left it in a hotel room and wondered what the finder must have thought of it.
