If at all possible, try and find some lovage for this salad, or plant some yourself - it is very easy to grow. This wonderful English herb is sadly ignored in modern cooking, and should be reinstated. Its slightly curried, aniseed twang is wonderfully intense and also goes well with lamb and all shellfish (and there’s a lot to say for it in a jug of Pimms too). Lovage really lifts this whole dish into another dimension; but if you can’t get any, it’s good anyway.
