Name: Green & pleasant land chicken salad
Yield: Serves 4-6
Ingredients: a small handful of chives, trimmed and chopped in half; 200 ml cold water; 100 ml white wine; 3-4 sprigs of thyme; 1 small onion, halved; 10 radishes, halved lengthways; flaked sea salt and black pepper; leaves from 5-6 sprigs of tarragon; 3 boneless, skinless free-range chicken breasts (about 450 g); 6 black peppercorns; 20 small lovage leaves; 3 tablespoons single cream; ¼ teaspoon mustard powder; ¼ teaspoon grated nutmeg; 25 g raisins; 1 bay leaf; ¼ teaspoon sugar; 1 fresh bay leaf, scrumpled; 150 g French beans (about 2 large handfuls); 40 g flaked almonds; 150 g shelled small broad beans; 6 tablespoons mayonnaise; 1 small fennel bulb, trimmed; 1 teaspoon tarragon vinegar

If at all possible, try and find some lovage for this salad, or plant some yourself - it is very easy to grow. This wonderful English herb is sadly ignored in modern cooking, and should be reinstated. Its slightly curried, aniseed twang is wonderfully intense and also goes well with lamb and all shellfish (and there’s a lot to say for it in a jug of Pimms too). Lovage really lifts this whole dish into another dimension; but if you can’t get any, it’s good anyway.
