I find the sheer rawness of a fish tartare exciting and invigorating, and I’m sure I can feel the various departments of my body taking the specific nourishment they need. This is more of a Sicilian than a French approach, made using pine nuts, orange and chile. It needs nothing but a fork to help it towards the mouth (having said that, I do like a little pert salad with it). Super-fresh and rigid mackerel is a good replacement for tuna.
