I love lobster drenched in garlic butter and pay my respects to the grand old Thermidor, but sometimes I want a fresher way, with little tampering. Here’s something different that reminds me of the crawfish I have eaten on beaches under the shade of fluttering palms or a crudely rigged-up tarpaulin. Pairing crustacea with grapefruit is nothing new, but the combination is fantastic.
