Definitely one of my favourite fish soups with its refreshing zip of lime juice, this tasty tomato and prawn broth is just one of many variations that I sipped in seaside hangouts along the Mexican coast when the midday sun stopped my fishing. It is just as good when made with other shellfish such as clams or crab instead of prawns, so use what you will. Chipotle chiles (smoked jalapeños) are now relatively easy to find in large supermarkets.
