Ingredients: 200 ml just-boiled water; 1 kg young broad beans in their pods (‘no thicker than a lady’s finger’), rinsed, de-strung and stalks removed; a generous pinch of caster sugar; 150 ml light olive oil; 2 tablespoons chopped dill; 2 tablespoons lemon juice; 2 garlic cloves, very finely chopped; 2 medium onions, halved and finely sliced; 300 ml Greek-style yoghurt; warmed flatbread, to serve; flaked sea salt
