There are two ways to enjoy your mushrooms quickly - either on toast or in pasta. Here is the latter. Desirable mushrooms for this dish would be girolles, yellow legs, ceps, blewitts, trompettes or fairy ring.

Ingredients

  • 150 g dried egg tagliatelle
  • 50 g butter, chilled

Method

Put a large pan of water on to boil and a large frying pan on a high heat. Work swiftly so that the two parts of the dish come together at the same time. Drop the pasta into the water and cook until ready (al dente is fine, but quite often this seems an excuse for wildly undercooked pasta).
