Cheese and pickle sandwiches are a staple in the Warner home - it’s my favourite filling of all - so here’s a pickle recipe.

Ingredients

  • 1 teaspoon black pepper
  • 1 thumb-sized piece of root ginger, peeled and finely chopped

Method

Put the pepper, ginger, cloves, bay leaf, sugar, raisins, salt and all but 2 tablespoons of the vinegar into a pan with the onions and boil gently until the onions have softened (about 20 minutes or so). Drop in the swede, apple and plums and simmer gently for 30 minutes more, no longer.
